French restaurant training requirements are sometimes misunderstood.
The general EU hygiene requirement is broad. People handling food must receive supervision and instruction or training in food hygiene that is appropriate to their work. France's Ministry of Agriculture confirms that this obligation applies to people working in establishments handling food and that suitable instruction can be organized internally or through an external provider.
France also has a separate specific training requirement for defined commercial restaurant activities, including traditional restaurants, cafeterias and certain self-service operations, and fast-food activities. Current Ministry guidance states that it is sufficient for one person in the establishment to meet the specific training requirement.
